It’s no secret that I’m pretty exhausted all the time. Between constant trips between baseball practices and games to running errands and not to mention my kids’ expanding social life, I’m always on the run. All this running around doesn’t leave too much time for cooking elaborate dinners.
I’m always on the hunt for quick and delicious meals for my family. I honestly hate running through fast food drive-thrus for dinner. But most days I don’t give dinner a thought until about 3pm. By then, it’s hard to get myself together and run to the store and whip up something satisfying all before we have to run out the door again.

In the late 1800s, the Bertolli business grew from its Italian roots when Italian emigrants in America, unable to find the products to which they were accustomed, wrote to Bertolli asking for crates of olive oil. Did you know that Italians say lunch is their largest meal of the day, while Americans cite dinner as the largest? Italians are more likely to agree that fresh ingredients and homemade dishes are important during the day’s biggest meal. I’m such a fan of fresh ingredients…maybe it’s because my family is of Italian descent…
Here’s another fun fact: Italians are three times more likely to have wine with their meals and more than two times more likely to set the table than Americans. No wonder I relate to my Italian roots so well!
The Bertolli Chicken Marsala and Roasted Redskin Potatoes is my favorite. Made with white meat chicken, crimini mushrooms, green beans, and redskin potatoes sauteéd in a Marsala wine sauce. It’s what I would make from scratch if I had time…but why when Bertolli has made it for me?!
My kids love the Chicken Florentine and Farfalle. Not sure if it’s because of the chicken, the creamy white wine sauce or the farfalle, but they can’t get enough of it!
I haven’t even told you the BEST part…it’s ready in 12 minutes. You heard me 12 MINUTES! All you need to do is pour the meal into a large non-stick skillet, cover it and cook over medium-high heat for 10-12 minutes. You really can’t get much easier than that!
Now there’s no excuse not to MANGIA like an Italian!
